The Farm and Family
Fazenda Um was purchased in 2009 by Stefano Um as part of his retirement plan and quickly grew into a leader in Brazilian specialty coffee. His sons, Boram and Garam Um, soon joined, founding Um Coffee Co. in São Paulo and raising the bar for coffee quality and education. Garam is a World Brewers Cup finalist and Boram the 2023 World Barista Champion. Their dedication to excellence inspired ongoing improvements at the farm, from sustainable, organic farming practices to advanced drying and experimental processing.
Cultivation & Processing
This lot of Mundo Novo variety grows in shady areas with rich volcanic soil and is farmed using organic methods. After harvest, cherries are naturally processed, spending 25 days on shaded raised beds and an additional 16 days on patios for slow, even drying. This careful approach results in a coffee that is round, sweet, and true to Brazil’s celebrated flavor profile.
Swiss Water® Process Decaffeination
To create a clean, caffeine-free cup, the coffee is gently decaffeinated in Canada using the Swiss Water® Process—a 100% chemical-free method that preserves the bean’s natural sweetness and complexity. The result is a decaf that retains the vibrant character of its origin, offering a comforting yet flavourful experience in every brew.
