Finca Los Cantares first earned international recognition in 2012 when a washed Geisha from the estate won first place at the Best of Panama. Today, the Don Tito Geisha carries that legacy of precision and elegance forward. Cultivated at 1,650 meters on volcanic soils near Volcán Barú National Park, it offers a refined cup with lime lollipop, orange blossom, and bergamot earl grey, framed by a smooth, balanced structure that reflects the mastery of the estate.

Finca Los Cantares
Founded in 1929 and located near Volcán Barú National Park in Boquete, Finca Los Cantares has become one of Panama’s most respected estates. Today it is owned and managed by Marie Jackie Mercer Vallarino, who has been producing specialty coffee since the early 2000s. Her dedication quickly gained international recognition: in 2012, a washed Geisha from Los Cantares won 1st place in the Best of Panama competition, followed by a 2nd place in 2014.
Cultivation & Terroir
Set between 1,500 and 1,650 MASL, the estate benefits from volcanic soil, cool mountain air, and proximity to the national park—factors that create the perfect microclimate for high-quality Geisha production. The Geisha trees at Los Cantares are selectively handpicked for ripest red cherries, ensuring only the best fruit enters processing.
Washed Processing
After harvesting, the cherries are depulped and fermented before being thoroughly washed in clean spring water. The parchment is then sun-dried on patios, raked frequently for even moisture, and carefully rested before export. This meticulous approach yields a coffee of exceptional clarity, structure, and aromatic complexity.
