About Coffee
Finca Los Cantares
Founded in 1929 and located near Volcán Barú National Park in Boquete, Finca Los Cantares has become one of Panama’s most respected estates. Today it is owned and managed by Marie Jackie Mercer Vallarino, who has been producing specialty coffee since the early 2000s. Her dedication quickly gained international recognition: in 2012, a washed Geisha from Los Cantares won 1st place in the Best of Panama competition, followed by a 2nd place in 2014.
Cultivation & Terroir
Set between 1,500 and 1,650 MASL, the estate benefits from volcanic soil, cool mountain air, and proximity to the national park—factors that create the perfect microclimate for high-quality Geisha production. The Geisha trees at Los Cantares are selectively handpicked for ripest red cherries, ensuring only the best fruit enters processing.
Natural Processing
For the Cantar Dorado Ruiseñor, only the ripest Geisha cherries are handpicked, rinsed to remove impurities, and then carefully dried whole on raised African beds under the Panamanian sun. Once the cherries reach the ideal humidity, the coffee is rested in the estate’s warehouse before being milled and prepared for export. This process enhances the coffee’s lush fruit character, developing a layered sweetness and a vibrant, aromatic cup.
